Cashew Chicken Stir-Fry Recipe

Hi everyone! Today I'm back with a delicious and healthy recipe for you to try. This stir-fry is full of greens and protein and can be topped over rice, quinoa, or even just served on it's own. This recipe makes four servings at approximately 450 calories each. It can be made in 20 minutes, so it's a super easy and quick dinner option. It's quickly turned into the dish my family and friends are constantly asking me to make... You have to give it a try!



Ingredients:

  • 1 pound of boneless, skinless chicken breast

  • 1 cup of broccoli

  • 1 cup of green beans

  • 1/2 cup of edamame

  • 1 cup unsalted cashews

Sauce:

  • 3 tablespoons of honey

  • 3 tablespoons of (low sodium) soy sauce

  • 2 tablespoons of rice vinegar

  • 1 tablespoon of hoisin sauce

  • 1 teaspoon of sriracha

  • 1/4 cup of chicken broth

  • 1 tablespoon of cornstarch

  • 1 tablespoon of minced garlic

  • 1 tablespoon of sesame oil


Instructions


1.) Mix all sauce ingredients together (honey, soy sauce, rice vinegar, hoisin sauce, sriracha, chicken broth, cornstarch, garlic, sesame oil) and set aside.

2.) Heat a large skillet over medium-high heat, add chicken in bite-sized pieces and sauté for six minutes, or until cooked.

3.) Cut broccoli and green beans into bite-sized pieces and add into skillet. Add in edamame as well.

4.) Add and stir the sauce mixture to skillet. Sauté until the sauce heats and thickens, about 1-2 minutes.

5.) Mix in the cashews and serve!
